Looking for a healthy snack that is easy to make?
How about something nutritious, wholesome, organic, and delicious?
Well, look no further… Banana pancakes check all the boxes 🙂
Here’s what you will need:
- Organic eggs
- Organic peanut butter
- Coconut Oil (yes… organic)
- Organic berries (blue berries, raspberries, whichever you prefer)
- Organic Banana’s
Is there an organic trend here? Sure seems like it…
- Frying Pan
Yep, just a few basic cooking essentials is all you will need.
Preparing and Cooking:
Add 2 eggs and 1 banana into the blender. This is enough for two people. If needed, adjust according to the amount of people your serving. (Banana pancake formula – 2 eggs for every 1 banana).
Once the eggs and banana are in the blender, blend until it has a thick and fluffy consistency.
Preheat frying pan on medium-high heat. Add a tablespoon of coconut oil to the pan (great to cook with). If you don’t like coconut oil, you can always use organic butter (unsalted).
Pour the “pancake mix” into the pan and cook thoroughly on each side of the flapjacks (usually 2-4 minutes on each side). Check them using your spatula to avoid burning.
Now it’s time to plate the cakes! Add your Banana pancakes to the plate and garnish them as desired. This is where you can add some peanut butter, berries, or both (my personal fav)!
Time to enjoy the fruits of your labor… EAT UP!
